Getting there by car: Noraker farm adjoins E16 midway between Aurdal and Leira in Valdres.
Noraker is also a nice stop on the old railway between Fagernes and Bjørgo , which has now become a great bike trace.
In Valdres we have managed to preserve and develop the ancient food culture with fermented fish, and at Noraker we have a long tradition for it. Uplands to the farm has many rich fishing lakes. During the summer there was a rich fishing in connection with life on mountain pasture. Fermenting made it possible to preserve the profits of fish with the knowledge of fermenting fish, a knowledge passed down between generations . On Noraker, as on other farms in Valdres , we had our own traditions for how the fish was salted in casks and matured in cellar.
Today fermented fish is the result of generations of experience combined with newer technology. We produce all the fish in their own breeding ponds where the water supply comes in penstock from mountain lakes of 900 m.o.s.l. Clean water in strong currents keep ponds clean, and in the strong waterfall spray the fish will get good exercise. Careful monitoring by closure and maturation, as well as strict hygiene in all operations also contributes to high and stable quality of fermented fish.
Today fermented fish is more than a delicacy. Our traditional fish also has a story to tell. We are happy to arrange group based tour of the farm. Or you can come by the farm shop for more information and samples of the different maturation ranks. It is also possible to have company or meeting to Noraker. In all food we use the most local ingredients.
